Lemon Raspberry Almond Muffins

Nutrition Awareness

lemon.raspberry.almond.muffinsDo you crave something sweet in the mornings? Are jelly-filled donuts or raspberry scones your weakness? Well, I have the recipe for you. It’s whole grain and full of fiber and has about half the calories and sugars as a muffin or donut from your local coffee shop (or worse– gas station). Make these ahead of time and grab one on your way out the door in the morning along with a piece of fruit or a yogurt. It will save you time, money and your body will thank you for it! Because of the fiber in these muffins, you won’t experience that 10am sugar crash.

Mango Bars – Mango Madness Month

veggiezest

Mango bar

Mangooooooooooooes!! They are everywhere. It’s the same story, every summer in India! Every grocery store, street vendor (selling fruits and vegetables) have been hijacked with the fruit. The lady who occasional rigs my bell to sell fish (carrying it in a huge container on her head) is also selling mangoes instead.

YES – it is a delicious and a fragrant fruit no doubt and in India it is actually considered as the king of fruit. I do really like it too!!

SO, I am going to make a few recipes with mangoes back to back. A salad, an entree, a dessert (current post), a frozen treat and a drink. Its only fair to give the fruit its due importance. I will be using a combination of raw and ripe mangoes for the recipes. Just in case mangoes are not readily available in your regular grocery store – make a trip to…

STRAWBERRY GREEK YOGURT BANANA BREAD

My digital kitchen 😋

20130509-112422.jpg

Banana bread! Aka “birthday bread” 😉 This isn’t for me (and that’s a first), instead I made it for my friend as a birthday treat. I know I know I should have baked a cake bla bla bla, but traditional routines get boring. Plus, this is more practical because she can enjoy this healthy treat for breakfast, or as a yummy snack! And trust me, you won’t get that luxury with cake, well at least your waistline won’t 🙂

20130509-112807.jpg

Plus, knowing my friend Katherine, she loves bananas, strawberries, and yogurt! So why not bring three of her favourite things together and make it into one awesome tasty miracle?

20130509-113000.jpg

I purposely didn’t mash the bananas into a smooth batter because I personally enjoy the chunky surprise in every bite (yes, i’m a banana lover too!)

Recipe: serves 14-15

Dry ingredients:

1 3/4 cup gluten free oat flour
1 tsp gluten/aluminum free…

Israeli Couscous With Red Snapper and Preserved Lemon

The Garum Factory

Several months ago Tal Shofman-Schejter, a former pastry chef at Rialto now living in Israel, emailed me some questions about lenses and food photography.  Last week her musician husband passed through Boston and dropped off a thank-you basket of Israeli goodies.   And that’s how we ended up with this week’s dish, baked Israeli Coucous with Red Snapper and Preserved Lemon.

Israelis couscous, sometimes called “giant couscous,” is often mistaken for fregola, a different bb-sized pasta from Sardinia.  Although they appear similar, and are sometimes used interchangeably outside of Sardinia and Israel, poke below the surface and the likeness disappears.  Fregola almost certainly made the jump to Sardinia from North African Berber culture, the birthplace of couscous, and has been around for hundreds of years.  Israeli couscous was born in the middle of the last century, during a period of austerity shortly after the founding of the state of…

Chipotle Shredded Beef Flatbread Sandwiches

The Gourmand Mom

My husband’s band was out of town for a gig on Saturday night, leaving me to get up early with the kids on Mother’s Day, as they eagerly attempted to prepare me my traditional, once-a-year breakfast-in-bed. My breakfast tray featured a half-eaten chocolate donut, sitting on top of a frozen pancake, which was elegantly placed on the foil wrapper from the plastic tub of the Frosted Flakes they prepared for me. (My boys prepare a classy breakfast tray.) They decided to toast only half of the bagel and gave up on spreading the too-thick cream cheese. The baby stayed occupied during the breakfast preparation by dipping an Elmo spoon into my cup of orange juice, taking small sips, then repeating. I enthusiastically ate all of my perfectly imperfect breakfast, of course.

Following breakfast, the three boys proceeded to spin cyclones of chaos around the house in a flurry of special…
